[Properties] Calcium acetate appears as white needle-like crystals or powder, hygroscopic. Slight acetic odor, relative density 1.50. Loses partial water at 150°C, decomposes into calcium carbonate at 160°C. Soluble in water, slightly soluble in ethanol.

[Applications] Calcium acetate is used in the food industry as a mold inhibitor, stabilizer, buffer, and flavor enhancer. It has excellent calcium supplementation properties and can also be used in pharmaceuticals and chemical reagents.

Uses: Chelating agent; mold inhibitor; stabilizer; buffer; flavor enhancer; preservative; nutritional fortifier; pH regulator; processing aid.

Calcium acetate is used as a food stabilizer, corrosion inhibitor, and in the synthesis of acetates.

1. Used as a food stabilizer, chelating agent, buffer, flavor enhancer, and corrosion inhibitor. Calcium acetate is also an excellent food calcium fortifier with better absorption than inorganic calcium. Can be used in foods at 33.0–6.0 g/kg (calculated as elemental calcium, same below); in cereals and their products at 1.6–3.2 g/kg;

Usage limits GB14880-2012: Cereals and their products, beverages 8–16 g/kg. GB2760-2014: Vinegar, 6–8 g/kg (calculated as Ca). 1: Edible caseinates, GMP. FDA, §184.1185 (2000): Baked goods, gelatin, puddings, fillings, 0.2%; sweet sauces, toppings, and dressings, 0.15%; others 0.0001%. EEC approved for packaged cheese powder, instant jelly powder. FEMA (mg/kg): Soft drinks 200; baked goods 500.
