Its calcium salt is more soluble in cold water than in hot water, a property often used to identify and separate citric acid. Controlling the appropriate temperature during crystallization can yield anhydrous citric acid. The aqueous solution is acidic. Slightly efflorescent in dry air, deliquescent in humid air. Decomposes above 175°C to release water and carbon dioxide. |
