Physicochemical Properties: White to yellowish-white crystalline granules or powder, odorless, slightly salty taste, decomposes above 200°C. Relatively stable in dry state when exposed to air. However, in aqueous solution, it oxidizes in the presence of air, metals, heat, or light. Highly soluble in water (55g/100ml), almost insoluble in ethanol. The pH of a 2% aqueous solution is 6.5-8.0.

Product Applications: Antioxidant properties—Sodium erythorbate has far superior antioxidant capabilities compared to sodium ascorbate. It does not enhance vitamin C activity but does not hinder the body's absorption and utilization of ascorbic acid. When ingested, sodium erythorbate can be converted into vitamin C in the body. Its physiological effect in terms of antiscorbutic activity is about 1/20 that of ascorbic acid, but it is roughly equivalent in effects such as lowering blood pressure, diuresis, glycogen formation in the liver, pigment excretion, and detoxification.
